Desserts, don't you just love them?
I adore that moment at the end of a good meal when the waiter arrives with the dessert menu.
That moment is almost better than eating the dessert itself; the moment of expectation and joy that holds you rapt, eager to plunge a spoon or a fork into some sweet, delicious delight. Plates piled high with cakes and pastries, ice-creams, glazed fruits, tartes, gâteaux, cream, whipped cream, double cream. Profiteroles oozing unctuous ice cream or custard, fondants bursting with a liquid chocolate lava that kisses its way down your throat and sends tingles over your taste buds.
But, how often do you have to say no to the temptation of the sweet menu? You feel that you must deny yourself the sweet sensual pleasures you crave, and why? Because of calories. Well, not in France mon amie. We French women adore our desserts. Our desserts are second to none for being calorie and sensation filled. Take this simple baked apple I cooked the other day. La Normandie is famous for its sensational and delicious apples. Whether it is for making cider or our famous Calvados apple brandy (Le Calvados or Le Calva for short), the orchards around us burst with autumnal fruit. These apples turn the orchards to red and gold as they ripen on the branches. This little beauty is a local Boskoop, scooped out, filled with raisins and sprinkled with sugar. Popped into the baking oven of the AGA for an hour. Serve plain for an autumnal taste explosion or with a crème fouettée (whipped cream) or crème anglaise (custard). Splash in some Calvados to add a kick or a sprinkle of cinnamon and orange zest for a Christmas twist. The taste of a baked apple brings the autumn orchards to your tongue. The nights drawing in, the early frosts and the first scents of wood smoke in the evenings. They are all there; just take a mouthful and let the tastes talk to your inner senses. Tempted yet?
